Apple Pancake ::Recipe::

Baked Apple Pancake
  • 4 T. butter
  • 2 cups apple, peeled and diced
  • 2 T. brown sugar
  • 1/2 tsp. cinnamon, ground
  • 4 large eggs
  • 1 c. whole milk
  • 1 c. flour
  • 1 tsp. vanilla
  • 1/2 tsp. salt
{Preheat oven to 425 degrees}
Apple Mixture:
Melt half the butter in a medium sized pot and add diced apples.  Saute until tender.  Sprinkle brown sugar and cinnamon aover the apples - stir until combined. 
Pancake Batter:
Whisk {in a medium bowl} together eggs, vanilla, milk, flour, and salt until blended.  Preheat a 9 x 13 casserole dish in the over for 5 minutes. 
Then add the remaing butter to coat the bottom of the casserole dish.  Pour the apple mixture evenly in the dish, and then cover it with the pancake batter.  Bake until puffy and golden for about 20-25 minutes.
Serve hot and dust with powdered sugar {if ya want}!
